1/2 cup low-fat buttermilk
1 egg white
10 drops hot sauce (about 1/2 teaspoon)
1 cup cornmeal
3/4 teaspoon salt
1 tablespoon canola oil
3 large green tomatoes, cut into 1/4-inch-thick slices (about 1 1/2 pounds)
Preheat oven to 450°F. Spray a large cookie sheet with nonstick spray.
Combine buttermilk, egg white, and hot sauce in a medium bowl. Mix cornmeal and salt in a pie dish. Dip the tomato slices into the buttermilk mixture, then into the cornmeal, gently turning to coat.
Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add half the tomato slices in a single layer and cook until browned on one side, 3 – 4 minutes.
Transfer the slices, browned-side up, to the cookie sheet. Lightly spray the tomatoes with nonstick spray. Bake until the tomatoes are golden brown on both sides, about 8 minutes. Wipe the skillet clean and repeat with the remaining oil, and tomato slices.
Serve hot.

I get so many compliments on all the dishes I make from my cookbooks. Ate at the restaurant once back in 2005 and I want to get back down there. Oh my goodness... the best!!!!

I was raised on fried green tomatoes. They were always breaded with corn meal. These sound wonderful. I can't wait to try them. Please don't put any flour on my fried green tomatoes.

Love this recipe and here are some variations. Add a little white flour and cornstarch to the cornmeal for added crunch and texture. I was lucky to find green romas at the store and bought them all ! There is less problem with mushyness in Romas and of course the great flavor. Slice,salt and let sit to draw out extra water and bitterness. Buttermilk is a great idea for a lower fat content. I add a pinch of cayenne (no salt) to the flour mixture for a little snap. Flour the tomatoes first then dip in egg/milk then flour again carefully place in the deep fryer that has been heated to 400 degress. This is quicker and the tomatoes don't just sit in fat and get greasy and they don't burn. Drain and serve with homemade Thousand Island dressing. MMMmmmmmmmm! Enjoy!

I love fried green tomatoes, my Granny would make them for me every sunday after church during my summer's in Arkansas. She had twenty-four great grandchildren, and some how she found time to do something special with each one of us. These tasted like her's and as a young mother I was glad to have a lighter recipe.
