12 vanilla wafers
2 eggs
1 teaspoon pure vanilla extract
1 cup sugar
2 (8-ounce) packages cream cheese, softened
1 (21-ounce) can blueberry filling, or other pie filling
Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a muffin pan.
Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition. Place a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with blueberry filling on top, or pie filling of your choice.

very easy and delicious, I found that the "Girl Scout" shortbread cookies work great for the bottom crust, also I stretched the batter to make two dozen tarts, I also used both cherry and blueberry pie filling for the topping. Thank You Paula.

This was a very easy, simple, and delicious dessert. I'm making it for a superbowl party and already know it's going to be a hit. I've made it before and everybody wants more. The only thing I do differnt is I add fresh sliced strawberries on top. Always a winner.

LOVED IT!!!! So easy to make and soooooo yummy to eat! I used some homemade raspberry jam for the topping. Just as yummy...if not better...than those fancy tarts/mini cheesecakes you get at a fancy reception. Definitely a KEEPER for the ages! Thank you, Ms. Paula!

This recipe was absolutely delish. The only thing I did different, was instead of blueberries, I used cut up fresh strawberries. It wasn't hard to make, very simple. I will make it over and over again. Thanks Paula!!!
