Recipe Courtesy of Paula DeenServings: 3 layer cakes
Cook Time: 25 min
Difficulty: Easy
1 cup (2 sticks) butter, at room temperature
2 cups sugar
4 eggs
3 cups sifted self-rising flour
1 cup milk
1 teaspoon pure vanilla extract
Preheat oven to 350 degrees F.
Grease and flour 3 (9-inch) cake pans. Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake. Bake for 25 to 30 minutes or until done. Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely and spread cake layers with your favorite frosting to make a 3-layer cake.

I made this cake not once but twice thinking I left something out because it did not rise ...I used all purpose flour not self rising I sure do wish there was something in the directions that said "if you use all purpose be sure to add baking soda to the recipe" not being a baker it would have been helpful....now back to try for the 3rd time I sure hope thats what the problem was...otherwise I will have to call it quits...

Made this last night for the purpose of making cake balls for a party I have tomorrow. Of course because it was Paula's recipe I had to sneak a piece of the cake into my mouth and it was so tasty!!! I know any recipe from Paula is trustworthy. Most important I love how simple and few ingredients were in it. Even one of my friends who cannot cook said she could make this. Nice and simple just as if using a box cake me in my opinion. Love your recipes Paula. Also, I just bought your book which is a combination of your two cookbooks Lady & Sons and so far from what I have made it is awesome!!!

This cake turned out great. I only had regular wheat flour on hand so I googled instruction on turning it into self-rising and it worked perfectly. I put a caramel glaze (realsimple.com) and chocolate icing (betty crocker) in between the layers and the people at work were beyond impressed. This one's a keeper.

Idon't know how many times I said I was going to write you a letter, but never got around to doing it. This email stuff is just great, isn't it? Whaqt i would like to know is when I'm baking and the reciped calls for self rising flour and all I have on hand is all prupose flour can I add baking powder to the all purpose flour? If so, how much baking powder would I add to the flour? I thought I thought I saw this in one of your cookbooks under suggestions, but I can't find it. I guess thats what comes with age (ha ha) I'd appreciate your answer. LOVE YA, LOVE YA,LOVE YA Janice
