Baked Sweet Potato Wedges

Ingredients Add to grocery list

1/2 cup, plus 2 tablespoons butter
1 1/2 teaspoons ground cinnamon
4 sweet potatoes, scrubbed and cut lengthwise into wedges
2 teaspoons salt
2 teaspoons freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.

In a large saucepan over medium-high heat, melt the butter. Remove the pot from the heat and stir in the cinnamon. Add the potato wedges to the butter and toss to combine. Season the potatoes with the salt and pepper.

Spread the potatoes in an even layer on a baking sheet. Roast the potatoes, stirring occasionally, until tender, about 20 to 25 minutes. Remove from the oven to a serving dish and serve.

This was very good. I added maple syrup & a bit of brown sugar and omitted the cinnamon.

These are by far the best Sweet Potatoes ever!! I have had them fixed several different ways and these are the easiest and tastiest! I only made half the recipe but could have tripled it! Thanks Paula!
