Souffle:
3 cups cooked and mashed sweet potatoes, from about 2 to 3 small baked potatoes
1 cup granulated sugar
3 eggs, beaten
1/2 cup milk
8 tablespoons unsalted butter, about 1 stick, melted
1 tablespoon vanilla extract
1/2 teaspoon salt
Topping:
1 cup packed light brown sugar
4 tablespoons unsalted butter, about 1/2 stick, cubed, at room temperature
1/2 cup self-rising cake flour
1 cup chopped pecans
Souffle: Preheat the oven to 400 degrees F. Lightly grease an 8-inch square baking dish.
In a large bowl, combine the sweet potatoes, sugar, eggs, milk, butter, vanilla, and salt. Pour the mixture into the prepared baking dish.
Topping: Combine the brown sugar, butter, flour, and pecans in a separate bowl. Crumble the topping over the sweet potato mixture.
Bake for 20 to 25 minutes, until the topping is golden brown. Serve hot.

This is one of our families must haves for years. I have to make 3, 1 for my son, 1 with nuts in the topping and 1 without nuts for my husband who has Chrones disease. My son and I can make a meal on this alone. It is good enough to be a dessert. We love you Paula!!

I have made this recipe for 35 years. It is the best Sweet Potato Casserole ever. I don't know how many people I have given the recipe to. I don't use but 2 TBSP. of butter in the topping. I like the topping alittle more crunchy. I also just used all purpose flour, which works great. Thanks for putting this southern recipe up for all to have.

This is my recipe as well!!! It is awesome!! You can take it an mix all the main ingredients together the day before and refrigerate it, then spread it out into a 13 x 9 pan, mix the topping and bake! Simply divine!!
