Recipe Courtesy of Paula DeenServings: 4 to 6 servings

Difficulty: Easy
1 pound cucumbers (about 2 cucumbers), peeled and thinly sliced
1 pint cherry tomatoes, halved
1/2 Vidalia onion, very thinly sliced
2 tablespoons chopped fresh parsley leaves
1 tablespoon apple cider vinegar
1 tablespoon olive oil
Salt and freshly ground black pepper
In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.

I am trying to find a receipe for using vinegar, sugar and water for soaking sliced cucumbers. I clearly remember watching my Grandmother making this but she didn't measure anything (just splashes and sprinkles depending on the size of the bowl). I've tried many times but can't seem to get the right proportions. I wouuld appreciate any suggestions you may be able to offer. Thank you, Charlotte

I make this but in my recipe I use rice vinegar, sweet and lo, a jar of artichoke hearts (juice and all,) and sometimes a firm avocado. Great alone or on lettuce - no need for a dressing at all.

This a great salad. One of my favorite summer salads for home or work is to cube cucumber, onion, green pepper, celery and green pimento stuffed olives and stir into a good thick cottage cheese. Peel and partially cut a home-grown tomato in 8 wedges (so that it make a blossom). Place on a leafy green lettuce leaf and place a mound of cottage cheese mixture in the center. Serve with your favorite crackers. YUM-Yum!

This recipe is DELISH...my kids are standing around the bowl eating it with their fingers right now its soooo good. They never eat tomatos either but they love this dish!! Easy to make and so so good!!! I added a bit of lemon juice to because I love the citrusy flavor!!

My Mom used to make a similar Salad with Cucumbers, tomatoes and onions. She would add some sugar and sour cream along with the vinegar. Let it stand awhile before serving. Great summer salad with any meal.

This is the Best salad. Very easy and tasty. I like it also with about a TBS of fresh grated parmesan stirred in. Let it sit about 30 minutes to an hour in the fridge. OMG...fantastic!!! Really good on Italian night. YUMMY!

Paula, have you ever considered compiling a yearly receipe book of all your receipes you publish in your magazine into one book for the whole year like Southern Living does? This would certainly save a lot of room in the cabinets and make the receipes more easily to refer to.
