Tomato Pie

Two cheeses and fresh basil bring out the goodness of the tomatoes.

 
 

Ingredients:

1 cup grated mozzarella
1   9-inch prebaked deep dish pie shell
1/2 cup chopped green onion
10   fresh basil leaves, chopped
4   tomatoes, peeled and sliced
1 cup grated cheddar
1 cup mayonnaise
salt and pepper

Directions

Preheat oven to 350 degrees.

First, blanch the tomatoes and slice. Place the tomatoes in the collinder to drain.

Using a medium sized bowl, mix mayonnaise, cheddar cheese, mozzarella cheese, salt and pepper.

Layer the tomato slices, basil, and onion in pie shell.  Season with salt and pepper.  Spread the mayonnaise and cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.

Sooooo good!!!!!! Saw the recipe in a magazine but looked up Paula's on computer. Am really glad I did. Could have eaten the whole pie. Can't wait to try the Vidalia onion pie. I am sure it will be just as good.

I have been making this ever since I read it in one of Paula's first cookbooks. My only problem is that I cannot make it real often, because I could eat the whole pie alone! I always squeeze the tomatoes, after peeling them to get rid of extra mositure and seeds. One of my top favorite recipes from Paula. Very consistent.

This was simply amazing, my kids were leery at first then had to take a bite now it is a fixture on my table at least twice a week. Thanx Paula your recipes are amazing and love almost everyone I make.
