Spinach and Bacon Quiche
 
 

Ingredients:

1   9 inch refrigerated piecrust, fitted to a 9 inch glass pie plate
1 1/2 cups shredded Swiss cheese
1 lb cooked bacon crumbled
2 cups chopped fresh baby spinach, packed
Salt and pepper to taste
6   large eggs beaten
1 1/2 cups heavy cream

Directions

Preheat the oven to 375.  Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

I have made this quiche a number of times and love it. It is the best!! I chop the spinach, it seems to allow the egg mixture to go all the way to the bottom. I highly recommend this recipe. Thank you Paula!!

Paula you've done it again, I did however switch cheeses fro swiss to cheddar. My family is'nt one to eat spinach but this Quiche won them over. Thank you for your southern home touch. ___Danny L. Anderson

This is mine and my husband's new favorite recipe. We've had it several times and we can never get enough. I am so glad that I can't find the amount of calories because I don't think I'm ready to switch to turkey bacon and egg whites.
