Hurry Up Chicken Pot Pie

This tastes so good, you won’t believe how quick and easy it is to make.

Ingredients:

1 1/2 cup instant biscuit mix
1 cup milk
1   stick melted butter
1   (10 3/4-ounce) can cream of chicken soup
Salt and pepper, optional
1/2 cup frozen green peas
1/2 cup thinly sliced carrots
2   hard-boiled eggs, sliced
2 cup chopped cooked chicken breast
1 cup chicken broth

Directions

Preheat oven to 350 degrees F.

In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.

Great recipe. I add different things--diced pimento, chopped scallions, celery, onions, parboiled diced potatoes, parboiled chopped broccoli. For a twist, I made it with diced sweet potatoes, again, parboiled, and boiled/peeled shrimp instead of chicken. You cannot go wrong with this recipe. Use what you have and be creative.

It is a great recipe. The only difference I did was to add mushrooms and 1/2 a can of cream of mushroom soup. B.A.McNabb Bracebridge, Ontario Canada

I LOVED this recipe. For years I have been searching for a really good chicken pot pie recipe that is simple. I finally found it! My husband agreed...he even said it was the best chicken pot pie he has ever had!

this is something that is so simple to make. I make it a couple of times a month. We use left over chicken that has a little spice to it so, it gives it a little more kick. I would reccomend this dish to everyone.

This is so easy to make and it was great! If you are looking for a cold, rainy day comfort food, this is it. Even though it said 4-6 servings it fed my husband and me with 2nd helpings each. There was enough left over for lunch the next day. I would have to double it when I make it again for the whole family. I have already written it down for my recipe box and plan on emailing this to family and friends. Thanks for a wonderful addition to our supper time.

I skipped the eggs, and loved it. Will make again and again.

This was delicious! We didn't use as much butter as the recipe called for, but it was still very good!
