Grandma Hiers’ Carrot Cake

Ingredients:

Butter, for pans
2 cups all-purpose flour, plus more for pans
2 cups sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
4 eggs
1 1/2 cups vegetable oil
3 cups grated carrots
1 1/2 cups chopped pecans, optional

Frosting:

2 (8-ounce) packages cream cheese, room temperature
1 stick salted butter, room temperature
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans

Directions

Preheat oven to 350 degrees F. Grease and flour 3 (9-inch) round pans; Line bottom of the pans with parchment paper.

In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt. Add eggs and vegetable oil. Using a hand mixer, blend until combined. Add carrots and pecans, if using.

Pour into pans. Bake for approximately 40 minutes. Remove from oven and cool for 5 minutes. Remove from pans, place on waxed paper and allow to cool completely before frosting.

For the frosting:

Add all ingredients, except nuts, into a medium bowl and beat until fluffy using a hand mixer. Stir in the nuts. Spread frosting on top of each cake layer. Stack the cakes on a serving plate and serve.

This is so awesome. Like many of the posts I read, I was worried that so much oil would make for a greasy carrot cake...but, to my surprise, it wasn't so! I'm a big believer in not substituting in new recipes, so I stuck it out. Thank goodness, because it was delish. I actually made these into cupcakes (just baked for 22 mins) for my Dad. In the North (WI) our powdered sugar doesn't come in boxes, but I used 4 cups for the frosting and it was perfect--not too sweet and very rich. I would recommend this recipe to EVERYONE. My boyfriend claims not to like carrot cake (probably because it includes a vegetable), but as these were baking he told me they smelled awesome and he'd definitely be trying some! Very easy, very foolproof. Thanks, Paula!

AMAZING, is all we (my husband and I) have to say. Took left overs into work and they didn't last 5 minutes! Going to make again this weekend for family thats coming into town. YOU MUST TRY THIS!!!!!

This just might be the best cake I've ever put in my mouth. It is so dense, moist, and flavorful. The icing is perfect! I will definitely make this again.

This cake was awesome, this is the recipe I was looking for on carrot cake. Moist and the icing is perfect to. Just a friendly tip, the cake mix is enough for three pans and I added just a TSP of brown sugar to the icing. Gotta love Paula Deen's recipes.

I have been looking for a good carrot cake recipe for ages and I finally found one. This is so moist, delicious and addictive. To top it off, this recipe is ridiculously easy. I used the recipe to make cupcakes and they were a huge hit. Two weeks later, and I am making them again because I have been craving them ever since!
