Cheesy Squash Casserole 54321

Ingredients:

1 tablespoon vegetable oil
6 medium yellow summer squash, thinly sliced
1 large Vidalia onion, thinly sliced
1 tablespoon butter
1/2 cup grated Parmesan
1 cup shredded sharp Cheddar
1/2 cup sour cream
Salt and freshly ground black pepper
1 sleeve crackers, crushed medium to fine (recommended: Ritz)

Directions

Preheat the oven to 350 degrees F. Grease a 2-quart casserole dish.

Heat the oil in a large skillet over medium heat. Saute the squash, onion, and butter until soft. Transfer to a bowl and stir in the Parmesan, Cheddar, and sour cream. Add salt and pepper, to taste.

Place in the prepared casserole dish and sprinkle the cracker crumbs evenly over the top. Bake for 20 minutes or until the top is golden and bubbly.

Wow! This was awesome! I added 1/4 cup Mozzarella; I may try adding zucchini next time, too. This one's definitely a keeper!

This recipe ROCKS! It is simple, quick and best of all...delicious. I served this at our Fourth of July cookout and for the first time, my mother-in-law actually asked ME for a recipe. My children liked it so much that I even had to make another dish for dinner the next night. This dish is certainly a keeper!

I tried this recipe because I love squash cooked any way, but I am not a big fan of the cheesy squash casserole. We did eat all left overs by adding bread crumbs and making patties and frying.

I love this recipe! My husband hates summer squash and it's like prying nails to get him to try and another way. I was blown away when he tried it. He ate the whole serving and then asked for two more helpings. I think that any thing that will get my hubby to eat more vegetables is a God sent. It's so easy too.

I love this recipe! My husband hates summer squash and it's like prying nails to get him to eat it. I saw this recipe on on Paula's show and had to try it. I was amazed because after trying it, my husband asked for two more helpings. Any thing that gets a man to eat more vegetables is a God sent.

My husband is not a big fan of squash and he enjoyed this. I LOVED it. It was easy to prepare and easy to eat. It didn't need any "tweaking" as I do with so many recipes. Absolutely delish!
