Apple Baked Bean Casserole

Ingredients:

5   strips bacon
1 cup onion, diced
2   cans Boston-style baked beans
1 cup Granny Smith apple, diced
1 tablespoon prepared mustard
1/4 cup brown sugar
1 teaspoon salt

Directions

Preheat the oven to 350 degrees.  Coat a 2-quart baking dish with nonstick cooking spray.  In a large bowl, combine all the ingredients except bacon and mix well.  Pour into covered baking dish and lay raw strips of bacon on top. Bake for approximately 45 minutes or until thick and bubbly.  Uncover and bake for 5 more minutes.

This is a great recipe. Being a vegetarian I substituted the bacon for veg hot dogs...worked just fine! Thanks Paula.

These baked beans with chopped apples are great. They are a big hit at our potlucks and I have handed this recipe down to several friends. Thank you Judy wilborn Glasgow Ky.
