“Refashioned” Turkey Meatloaf “Refashioned” Turkey Meatloaf Recipe Courtesy of

Ingredients Add to grocery list

½ medium head cauliflower, cut into small florets
1/2 cup chicken broth
1 ½ teaspoon canola oil
1 small chopped onion
3 cloves garlic, chopped
1 ½ pounds 85 % lean ground turkey
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
¼ cup chopped parsley
1/2 cup quick-cooking oats
2 tablespoons grated Parmesan cheese

Topping:
1/3 cup ketchup
1 tablespoon dijon mustard

Directions

Preheat oven to 375 degrees F. Cover a sheet tray with foil.

Add the cauliflower florets to a small saucepan and cover with the chicken broth. Cover the pot with a lid. Simmer until tender. Add cauliflower to a blender along with the broth ½ cup broth. Blend until smooth, scraping sides of blender as necessary. Let cool. The cauliflower will thicken as it cools down.

Heat oil in a large non stick sauté pan. Once shimmering, sauté onion and garlic until just softened. Remove to a large bowl to cool. Once cool, add pureed cauliflower, turkey, salt, pepper, parsley, quick cooking oats, and Parmesan cheese. Mix all meatloaf ingredients well. Shape into a loaf on the prepared sheet tray.  In a small bowl, mix together the ketchup and mustard and brush on top of the loaf.

Bake for 45 minutes, until cooked through. Rest for 5 minutes before slicing.

Everyone in my family loves this, if you have kids that do not like onions I sauteed them with the garlic and blended them in with the cauliflower and broth, they never had a clue.... We have this every other week... Very, Very good!!!!

I love this recipe but it took much longer than 45 minutes. Next time I will probably make two smaller loaves. Delicious.

Virginia, if you make it as 5 servings its about 6 points. There's a WW kitchen app that you can put in a recipe and it will calculate the points.

I too want the analysis of recipes. Copied it to a recipe analyzing website. I adjusted some of the ingredients for a healthier product. It wouldn't let me copy the nutritional info. Sorry. I made this tonight just like the recipe calls for. It was moist and delicious. I'm doing the Weight Watchers and needed to know the fiber, calories and total fat to calculate points. Where can I get this information?? Plus I read it's good if you are a diabetic so I will be passing this on to Mom so she can make it for Dad. Thanks...Love ya Paula!

This was delicious! Very moist, flavorful, and so healthy! The cauliflower puree is genius! I made mine exactly per the recipe, but I bet you could add some shredded carrots and maybe use some cooked quinoa in place of oatmeal to lower the carb content. Super recipe as is, though! Thanks, Paula!

Looking forward to trying this recipe. It would make life a lot easier for diabetics, however, if you would include the nutritional information with your recipes. We must calculate the carbs for each ingredient, then divide by the number of servings for every recipe we print so we know how much insulin we need take. Thanks.

I watched Bobby make his meatloaf on his program with his two friends and there were mushrooms cut and put into the meatloaf. Is this an option or were the mushrooms left out of the tv recipe?
