1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
Shredded Medium Cheddar Cheese
In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream, and butter. Pour into a greased casserole. Bake at 350 degrees for 40 to 45 minutes, or until golden brown. Top with generous amount of cheddar cheese and return to oven for another 5 minutes until cheese is melted.

I made this today to go along with a crock pot full of pork neck bones. To say we loved it was an understatement. My family devoured it! I did tweak it just a hair, I added 3 tablespoons of sugar. We like our cornbread sweet. Just the perfect touch. Also added pepper, salt and garlic powder to our taste. What can we say, we love flavor. I highly recommend at your next tailgate party.

I thought this was okay. The sweetness of the creamed corn is what made it sub-par for me. Was I not supposed to use sweet creamed corn? I found that it overpowered it too much. It completely hid the flavor of the cheese and everything else. I might try this again, but substitute the creamed corn for blended regular corn.

I have made thei Cornbread casserole once for a Church gathering and everyone loved it, however, I doubled the recipe & made it in a 9x13 pan. What is recommended cooking time & temp this way ? Also, can you pre make for an event the next day, leave it out ovenight and just warm up the next day in the afternoon ?

This is the most easiest to prepare and the tastiest corn dish( I do use fat free butter and fat free sour cream and do not use the cheese.you can not taste the difference)...Never lasts long at our house.

Hi ya'll. For those whiskey lickers that are asking about the cornbread in this here recipe... Ya just need to dump the cornbread mix from the actual box and mix it in with the corn. That's it! No pre-baking needed. May ya'll have a blessed New Year!
