Old-fashioned Meatloaf - A.K.A Basic Meatloaf Recipe by Paula Deen

  • 1 lb ground beef
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1 egg, lightly beaten
  • 8 oz canned diced tomatoes, without juice
  • 1/2 cup quick-cooking oats
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard


Preheat oven to 375°.


Mix ground beef, salt, pepper, onion, bell pepper, egg, tomatoes and oats together well and place in a baking dish. Shape into a loaf.



Mix ketchup, brown sugar and mustard and spread on loaf. Bake for 1 hour.

Best meat loaf ever. Family loves it. Usually double the recipe but use 3lbs of ground beef instead of 2. Also, I make extra sauce for the table besides what goes on top. This recipe is better that the one on Foodnetwork, which doesn't drain the can tomatoes and has 1/2 the oats.

Hi Paula, haven't made this yet but is so similar to my own recipe, feel comfortable rating it. Thank you for sharing your recipe, am going to make it with your exact ingredients. Mine isn't written down and isn't so exact. :-) I believe one of the secrets to good meatloaf is to have high-quality hamburger meat. Sylvieann, your loyal fan. xo

Have made this f

Have made this for my family a couple of times. It is absolutely the best meatloaf. I Double it using one pund of 97% lean ground Chuck and one pond of 97% lean ground turkey. Form it into a ring and put a half of pealed, center scored, onion in the middle. Top with the special sauce. Bake for one hour, rest for 10-15 minutes, slice and serve.

Meatloaf has long been a family favorite, and this combination is one I come back to again and again. It is moist and flavorful and so easy. If you like meatloaf you will love this one!

I've made this r

I've made this recipe for years, with just a few modifications for our personal tastes. We actually prefer dried onion flakes to fresh onion in this (I know- fresh is better, but just for this, we like the dried better.) I also leave out the green peppers, because my sister doesn't like them. To make up for that, I sub diced tomatoes with green chiles for the regular diced tomatoes. In our opinion, the topping is what makes this recipe. My sister insists that I make extra "gravy," as she calls it, to pour over her portion on her plate.

I made this recipe a day ahead of having my family for dinner.
Of course the Cook must taste it.. and OMG... it is amazing
Sure would recommend this...
I did add only 2 extras to this recipe
granulated garlic
and 2 slices of bacon to the top of the topping before baking

In place of oats

In place of oats, my grandma used 3 slices of watered soaked sandwich bread to keep meatloaf moist. Just remember to squeeze out most of the water and tear into small pieces. Her red sauce was just that more of a sauce than a paste on top of meatloaf.

I wish that in t

I wish that in the ingredients list it would have said: "Topping Ingredients"...or at least "Topping"......I am a horrible meatloaf maker and I ended up dumping ALL in the ingredients into the meatloaf not realizing that those last 3 listed were for the topping :-( Guess I'm not so good at following instructions either...
