Mrs. Goover’s Banana Cake
For the cake
2 1/2 cups   sifted cake flour
1 2/3 cups   sugar
1 1/4 teaspoons   baking powder
1 1/4 teaspoons   baking soda
1 teaspoon   salt
1 teaspoon   ground cinnamon
2/3 cup   vegetable shortening
2/3 cup   buttermilk
1 1/4 cups   mashed ripe banana
2 large   eggs
 
For the Cream Cheese and nut frosting
One 8-ounce package   cream cheese, room temperature
1 stick (1/2 cup)  unsalted butter, room temperature
One 1-pound box   confectioners’ sugar
1 teaspoon   vanilla extract
1 cup   chopped pecans
 

1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch or two 9-inch cake pans.

2. Sift the flour, sugar, baking powder, baking soda, salt, and cinnamon into a large mixing bowl; add the shortening, buttermilk, and banana. Mix until all the dry ingredients are dampened, then beat at low speed for 2 minutes. Add the eggs and beat for 1 minute.

3. Divide the batter among the prepared pans and bake for 25 to 30 minutes. Cool for 10 minutes in the pans, then turn out the cakes on a rack to cool completely before frosting.

Make the frosting
1. Combine the cream cheese, butter, confectioners’ sugar, and vanilla extract and beat until fluffy. Fold in the pecans, and frost the cake. If you love lots of icing, you can make 1 1/2 times this recipe. Remember, this is not banana bread but a stacked cake, so be sure to frost between the layers as well as the outside.

A friend of Paula’s was on Paula’s Best Dishes recently and made cinnamon rolls which required a starter.  I can’t make the recipe without the starter.  What are the ingredients so that I can get it started and keep it going?  What are the directions?  I would love to have the recipe for the starter and the cinnamon roll recipe - just haven’t been able to find it.  Thanks.

Sour Cream Caramel Cake by Paula Deen

Cake

1 cup butter, softened
3 cups sugar
6 eggs
2 1/3 cups all purpose flour
1 tsp. salt
1/4 tsp. baking soda
1 cup sour cream
1 Tblsp. vanilla extract

Caramel Icing

2 cups dark brown sugar, packed
1 cup butter, softened
1/2 cup evaporated milk
1/2 tsp. vanilla extract
4 cups confectioners sugar

Preheat oven to 350 degrees. Grease and flour three 9-inch round cake pans or one 13x9-inch pan. For the cake, cream the butter and sugar until fluffy. Add the eggs, one at a time, beating after each addition. Sift the flour, salt, and baking soda together. Alternately add the flour mixture and the sour cream to the batter, stirring well. Stir in the vanilla. Pour the batter into the prepared pans and bake for 25 to 35 minutes or until firm to the touch if using round pans, 45 minutes if using the rectangular pan. Let the cakes cool in the pans for a few minutes, then turn them out onto cake racks to cool completely.

While the cakes cool, make the icing: In a large heavy saucepan, combine the brown sugar, butter and milk. Cook over low heat until the butter melts. Increase the heat to medium and cook, stirring constantly for 2 minutes longer. Remove the pan from the heat and stir in the vanilla. Gradually mix in the confectioners sugar. Let the icing cool slightly, then frost the cooled cake.

Cornmeal Chicken Parmesan

2 large eggs
1/2 cup yellow cornmeal mix
1/2 cup panko (Japanese-style breadcrumbs)
1 (0.7-ounce) package Italian dry salad dressing and seasoning mix
4 boneless skinless chicken breasts
1/2 cup olive oil
1 (26-ounce) jar marinara sauce
1 cup finely shredded Parmesan cheese
1 cup grated mozzarella cheese
Garnish: chopped fresh parsley

Instructions
Preheat oven to 350°. In a shallow dish, lightly beat eggs. In a separate shallow dish, combine cornmeal mix, panko, and seasoning mix. Dip chicken in eggs; dredge in cornmeal mixture. In a large nonstick skillet, heat olive oil over medium heat. Cook chicken 2 to 3 minutes per side or until lightly browned. Place in a 13x9-inch casserole dish. Bake for 15 minutes. Top with pasta sauce and bake 15 minutes. Top with cheese and bake 15 minutes. Garnish with parsley, if desired.
