For Christmas a friend gave me a basket of Paula’s spices and sauces. They are fantastic. For New Year’s Eve I fixed Shrimp and Grits using my new spices. The original recipe came from a friend, Ginger. Best I’ve ever made!
Shrimp and Grits
Grits
6 c water
2 t salt
1 1/2 cup Paula Deen Grits
1/2 c half and half
2 T butter
1 roll garlic cheese (6 oz.)*
1 teaspoon Worcestershire sauce
Cook grits according to directions, adding half and half when grits start to thicken. When grits are ready, add cheese and heat until it melts.
Shrimp
1/2 cup butter
1/4 cup olive oil
1.5 lb med to large shrimp, cut into bite size
1 clove garlic, minced
1 cup chopped green onions
1 cup sliced mushrooms
1/2 cup chopped parsley
1/2 teaspoon Paula’s Silly Salt
1 teaspoon Paula’s Pepper Mix
1/2 teaspoon Paula’s Paprika Spice Blend
1 teaspoon Paula’s Sweet Italian Herb Blend
1/4 teaspoon Paula’s Hot Sauce (or more depending on your taste…I add & taste)
1Tablespoon fresh lemon juice
1 can Original Rotel tomatoes, chopped
2 cans diced tomatoes
2-4 Tablespoons all purpose flour
Melt butter in oil and saute all ingredients, except shrimp and flour. Simmer 10 minutes or so. Add 2-4 Tablespoons all purpose flour to thicken to desired consistency.
Add shrimp just before ready to serve and cook until pink.
Serve grits topped with shrimp and sauce. Garnish with spring of parsley. Serves 6-8.
*You can no longer get the garlic cheese rolls in the grocery store. I found this recipe somewhere on the web (sorry I didn’t make a note) and it works great. It’s also good for a snack with crackers.
Garlic Cheese Rolls
11/2 pounds sharp cheddar cheese, grated
1/2 pound processed cheese product such as Velveeta
3 ounces cream cheese
1 teaspoon Paula Deen Silly Salt
Garlic powder to taste
Soften cheeses and mix all together well. Shape into four rolls and wrap well in foil or plastic wrap. Keeps in refrigerator 3-4 months.
OR (I haven’t tried this yet.)
Substitute for the discontinued Kraft Garlic Cheese rolls. Try this: For each 6 ounce roll, substitute either 6 ounces of Velveeta or Cheez Whiz from a jar, plus 1/8 teaspoon garlic powder.
