I also buy my ground meat in bulk and

I use my ground beef to make up meat loafs ahead and freeze
and i make my own hamburger patties and freeze ahead i place them in the ziplock freezer bags or i will use my vac sealer and freeze
by using the ziplick freezer bags i can take out only what i need at a meal
these also thaw faster than a big pound chunk of meat if i need a little for a recipe

Hi y’all!

My hubby loves Mexican dishes… so I always pre-fry my hamburger… then dibby up the plain meat first. After that, I add taco seasonings to the rest, then dibby that up…. put my meat into zip lock sandwich baggies (in order to save money vs plastic seal a meal, once the meat is in the baggie, I zip it ALMOST all the way, then manually press as much air out of the bag as possible, then zip it the rest of the way)... then put those baggies into a freezer bag. =)

On a lazy night, lol, I take a pre-portioned taco meat outta the freezer, throw it in the nuker to defrost, then add a can of chili… stir it all up and pour over El Monterey Taquitos… or thereabouts, hehehe.

oh, and one more thing… a splash of Country Bob’s steak sauce stirred into taco meated chili is scrumpdillylicious, if I do say so myself!

Thanks for the tip! I wouldn’t have thought of doing it that way.

Great suggestions here.  I’ve always brought the family pack home and then re-packaged it into smaller bags (raw), I like the idea of cooking the whole thing right away, that saves time.  It’s just that after shopping, I’m too worn out to cook!  (am in a wheelchair, so it takes a lot of energy).

My suggestion is to make your own bread products using a bread machine.  Since losing my job (of 30 yrs) we’ve had to cut back to the bones, being diabetics, we still need to incorporate whole grained bread into our diets.  so, I got out my (not used much) breach machine and now make wonderful whole wheat bread.  we also make whole wheat pizza crusts!  It’s so easy to make the crusts and pizza sauce, and it can be so good, and more healthy to make your own.  I microwave an onion in a pad of butter and/or olive oil until it caramelizes, this is a wonderful addition to the pizza (I hate raw onions though).  we add bell peppers, and lowfat cheese.  An easy pizza sauce is a can of tomato sauce with a half can of tomato paste (you can adjust the measurements to suit you), add italian seasonings, (oregano based) then add a touch of sugar to offset the acidicness, let sit for awhile for the seasonings to come out.  It’s pretty easy.
You can make 2 crusts at once, and freeze one.  You can freeze the entire pizza as well, and just pull it out of your freezer when needed.
p.s.  I’m still working on making my own rolls from the dough, they come out ok, but I need a bit more work on them.

Dee,
Would you mind sharing your whole grain bread recipe for the bread machine? I would love to try that.
I will definitely try your pizza suggestions.
