Hello! I’ve totally exhausted my recipes for kid-friendly dinner meals. I have our niece’s coming every weekend and don’t want to keep feeding them the same thing (i.e spaghetti & meatballs w/salad and The lady’s Cheesy Mac w/fried chicken strips and veggie).

The girls are ages 9 and 11 plus our 4 year old son. I seem to do fine with breakfasts & lunches. Since we are on a tight budget…nothing that calls for out-of-the ordinary ingredients. They get a lot of pre-made and/or processed foods at home (which we don’t do except as a “treat” so the Corn Dogs last weekend didn’t get much excitement except from our boy cool smirk )

I also make red beans & rice but since it is an all afternoon simmer fest….not a regular occurrence. I have tons of pork, chicken breasts (boneless skinless & with) in the freezer for a protein but this months budget (because of Thanksgiving) is rather limited and my pantry is already stocked.

Oh and for some reason, I am not able to make a decent meatloaf that doesn’t cook in grease…...and I haven’t been able to find a decent pizza dough recipe that works for pizza….but they works great for Calzone-type (think homemade Hot Pockets).

Any suggestions would be greatly appreciated. I know I won’t be able to please ALL the kids and the hubby at every meal but oh well. Oh and my 4 year old just informed me he hates soup….hubby not too keen on it either.

How bout individual pizzas using canned biscuits rolled out.  We do this at school for the kids in our room.  They get to pick the toppings and since they are doing the toppings, they will eat them.  We brown hamburger   pepperonni(probably not spelled correctly) cheese mushrooms peppers etc.  You would be amazed at the things they will add, then eat.
