Does anyone else grow vegetables in your own garden?  It’s a good way to save $$$.........unless you get into buying everything it takes to do some freezing and canning, especially.  Then I’m not so sure!  I’ve canned green beans, pickles and frozen corn and lima beans…....so far.  Still have more cucumbers to “pickle” and will have late corn, okra and peas to freeze.  We also have loads of squash but my family only likes them fried so haven’t found a good way to freeze them to be fried later.  Any ideas?  We’re getting tomatoes also but not enough to can or freeze…....just enough for those good “mater” sandwiches!!

Have you tried rolling them in the cornmeal and flour then putting them in a single layer on a baking sheet and drying them in the oven for 20 minutes on 300*. Then freeze. That is the way I do mine.  They are pretty good.

No, never dried the squash in the oven but I’ll certainly give it a try.  I’ve blanched slices before but they always seem watery and not worth the effort.  Actually, I like stewed squash the best - with onions and a little milk, butter and cheese added to it.  However, noone else will touch it.  I’m going to try the PD squash casserole - as soon as I get all the cukes pickled!  I’m fighting the urge to do a batch today even tho’ it’s Sunday. 

Do you freeze okra this way also?  I usually fry okra all the way and freeze it to use for vegetable soup.

I have done the okra this way.  I like it also.  Just get your oil good and hot when you put them in and it gives a good crust.  With putting them in a single layer on the sheet they aren’t as bad to clump together when you put them in freezer.  Not slimmy either.  I can not handle slimmy okra.
