Banana Nut Cake
1-1/2 c. sugar
1 stick butter, softened
1 tsp. vanilla
1-1/4 c. mashed bananas
3/4 c. chopped walnuts
1-1/2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/4 c. buttermilk
Beat all ingredients together. Pour into 2 greased and floured 9 inch cake pans or 1 (9 x 13 inch) pan. Bake for 30 minutes at 350 or until center springs back when touched lightly. Cool completely and frost with Cream Chesse Frosting.
Cream Cheese Frosting
Cream together 2 T. butter, 1 tsp. vanilla, and 1 (3 oz.) package cream cheese (softened). Add 1-1/2 to 2 c. powdered sugar, adding 1/2 c. at a time to blend smoothly. Beat until mixture is creamy and smooth. If needed, add scant amounts of milk until frosting is of spreading consistency.
