Gooey Butter Cake Recipes and Comments

I made this for a potluck this evening and EVERYBODY loved it! Seriously, I saw people going back for thirds!

This is the ultimate chocolate lovers cake.

I can’t wait to try the other versions of this cake.

I haven’t tried the gooey cake yet so I went over to Foodnetwork & printed it out.  Can’t wait to try it.

I haven’t done that one but did the Elvis gooey cake (it has bananas in it) last year for my sis-in-law’s b’day.  It was yummy too!

I can’t wait for you to try it. It is very good. Just don’t overbake. Don’t be afraid of it looking a little not cooked in the middle. It’s cooked if you cook it the right amount of time. It’s just gooey in the middle. mmmm…....

Make sure you post your results. I can’t wait to hear about it.

I’ve tried a couple of variations on this recipe, and my favorite is the original plain gooey butter cake. I made 7 for presents this past Christmas.

My Grandmother’s Coconut Pie

1 stick margarine (or butter)
3 eggs
1 cup sugar
1 can flake coconut
1 Tbsp. vinegar
1 tsp. vanilla flavoring

Beat eggs lightly.  Cream sugar and margarine.  Add the eggs, vinegar, coconut and flavoring.
Pour into unbaked pie shell and bake at 350 degrees until golden brown.  (I’ve never actually
timed how long I bake it…....probably 35-45 mins…......depends on how hot your oven is.)

I made the Coconut Gooey Butter Cake Fri. nite, it was pretty good, but think the plain or the pumpkin is my favorite. I have not made the Chocolate one, so will have to try that. Not much Chocolate I don’t like.

Last night I made the Toffee Gooey Butter Cake, but I used a chocolate cake mix, so I guess I made a Chocolate Toffee Gooey Butter Cake. Oh my…........ Delicious!
I was in the mood to bake and apparently one cake was not enough.  I then made a Strawberry Jello Poke Cake. I’ll be sending some over to the neighbors.  Too much cake in the house makes for one happy dentist!

My favorite gooey is the pumpkin.  I had someone say it was better than The Cheesecake Factory’s pumpkin.  These little delights have been a hit wherever I’ve takne them and I have made a lot of them.  My all time favorite dessert for pot luck dinners.

Do take heed and not overbake or you will have tough edges.  I lower the temp and cook just a litle bit longer than called for.

Ingredients
8 tablespoons (1 stick) butter, melted, plus 8 more tablespoons (1 stick) butter, melted, plus additional butter, for greasing pan
1 (18.25-ounce) package chocolate cake mix
1 egg, plus 2 eggs
1 (8-ounce) package cream cheese, softened
3 to 4 tablespoons cocoa powder
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1 cup chopped nuts
Directions
Preheat oven to 350 degrees F.

Lightly grease a 13 by 9-inch baking pan.

In a large bowl, combine the cake mix, 1 egg, and 1 stick melted butter, and stir until well blended. Pat mixture into prepared pan and set aside.

In a stand mixer, or with a hand mixer, beat the cream cheese until smooth. Add the remaining 2 eggs, and the cocoa powder. Lower the speed of the mixer, and add the powdered sugar. Continue beating until ingredients are well mixed. Slowly add the remaining 1 stick of melted butter, and the vanilla, continuing to beat the mixture until smooth. Stir in nuts with a rubber spatula. Spread filling over cake mixture in pan. Bake for 40 to 50 minutes. Be careful not to overcook the cake; the center should still be a little gooey when finished baking. Let cake partially cool on a wire rack before cutting into pieces.
