Brunch Eggs

Her`s a delightful way to serve eggs for a special brunch or just a special Saturday morning treat. My mom used to make them for me especially when I had a sleepover. Don`t know where she got the idea but I loved them

Eggs in a cloud

4 lightly toasted bread slices
4 eggs separated (whites and yolks) Keep yolks in their shells and set aside.
salt and pepper to taste
Place toast on cookie sheet,Beat egg whites untill stiff add a little salt if desired. Spoon onto each slice of toast, make a depression in the center and drop an egg yolk into the depression. Continue with each slice of toast. Season with s&p as desired and if desired sprinkle with desired shredded cheese. Bake @ 350 for 10 o15 min till set and merengue is golden .These are so yummy and cute smile

Thanks Maxinemary.  I’m always looking for new ways to cook eggs but I’ve never seen this recipe.  I’m definitely gonna try it.  smile

my dad made this without the meringuey stuff. He called them one eyed sandwiches.

I make what we call “Eggs in a Basket” in a skillet on the stove.  The grands love them.  I had forgotten about this recipe Maxine.  I’m gonna try them this week.  smile

The one eyed sandwiches we made were the ones they now call eggs in a frame or toad in a hole LOL I make those quite often. I haven`t made the meringuey things for a long time but I may do that tomorrow. Kinda getting a longin` for `em.

Has anybody made the “omelet in a bag”? I got an e-mail for this a while back and it really does work. It`s also a great way to let the kids make their own
Omlet in a bag
1 qt. size zip lock FREEZER bag
2 eggs
cheese or veggies of choice or ham or brown and serve sausage slices
salt and pepper to taste

Put all in the bag, zip bag shut and shake, shake, shake
Place bag in boiling pot of water for EXACTLY 13 minutes. Open and serve!

I alwayskeep hard boiled eggs in the fridge. Love em to snack on. Good source of protein and healthy appetite curbing snack.
