Pork Chart

By Paula Deen Test Kitchen

Ever wonder what part of a pig the cuts of pork you purchase from your local butcher come from? Let Paula’s simple pork chart of the primal cuts show you. Pork is divided into these large sections called primal cuts. The primal cuts are then broken down further into your individual retail cuts. Follow the primal cuts from Paula’s pork chart to the key below to click on some of her favorite recipes for each cut.

I’ve been around pigs most of my young life - helped “slop” many of them!  But what in the world is the “clear plate” on the drawing?

Love the chart! But what do you do with the hind feet??

By Brenda Gaines on March 15, 2010

A link to print this to add to my 3-ring binder recipe book would be great.  I’ll just save the photo and then print it.  I’ve got a beef page from my Better Homes and Gardens magazine a few years ago. Thanks Paula and Evan!
