Layers of Love…a Valentine’s Day Parfait

Libbie has asked me to guest blog for her this week and I’m happy to break out of the border over at thedeenbros.com (where y’all can catch my regular blog post every Tuesday). This is Valentine’s week and y’all know I LOVE LOVE LOVE my Valentine.

My wife Brooke and I will celebrate our fifth wedding anniversary this year and I am so thankful for her and all she adds to my life. She also gets my vote for Mother of the Year… every year.

Every chance I get, I love to do something special for her, and hand making her a food treat makes us both feel good. The parfait is a great choice here; it’s simple, beautiful and easy to customize to your Valentine’s personal favorite flavors.

Start with a glass serving piece. A large glass container lets you make enough for the whole family or use a single serving glass if it’s just for two; a red wine glass is a great choice.

Take some heavy whipping cream and whip it up with some granulated sugar until peaks form. Stick this in the fridge while you prep out your fruit. Strawberries, blueberries, black berries, kiwi fruit, star fruit, oranges, raspberries….y’all get the picture? Take anything your honey likes to eat and get it ready.

Take your glass and layer a generous amount of your fresh cream in the bottom. Next, add a layer of fruit. Use one fruit, or a mixture, being sure to press it against the outside of the glass, we want to be able to see the fruit, make it an inch or so across. Add another layer of cream and repeat the fruit, cream process until you top out the glass. Save an especially beautiful berry for the top and after adding a fresh sprig of mint you have the perfect ending to a special day…or a beautiful beginning.
