Bobby’s Lighter Gooey Butter Cake

Gooey Butter Cake

Ingredients:
1 (18 1/4-ounce) package yellow cake mix
1/2 cup reduced-fat buttermilk
1 egg, lightly beaten
1 tablespoon canola oil

Filling
1 (8-ounce) package reduced-fat cream cheese (Neufchatel)
3/4 cup confectioners’ sugar
1/4 cup plain low-fat (2%) Greek-style yogurt
1 large egg, at room temperature
1 teaspoon vanilla extract
1 teaspoon melted butter
Directions:
Preheat the oven to 350°F. Spray a 9 x 9-inch baking dish with nonstick spray.

Place the cake mix in a large bowl. Whisk together the buttermilk, egg, and oil in a small bowl until blended. Add the buttermilk mixture to the cake mix, stirring just until blended. Pour the mixture into the baking dish.

Beat the cream cheese until smooth. Beat in the sugar, yogurt, egg, vanilla, and butter. Spread over the cake mixture. Bake 40 – 50 minutes. You want the center to be a little gooey, so do not over bake.

Where do I find an 18 and 1/4 oz. cake mix? Why is it (lighter version) baked in a 9x9 dish and Paul's is baked in a 13x9 dish and both call for an 18 and 1/4 oz. cake mix? I love Paula loved her show, vibrant personality her family and all her recipes. I made this for my ladies club and they loved it. Hi Paula, I like Twitter but I am a talker so too few words on there. My daughter, her friends and myself are in love with you, your sons and your recipes. We have been to The Lady and Sons before and OMG left stuffed. Well, we never forgot our experience and hoping to go on the January cruise. We have never been cruising in the islands. We've been to Alaska twice in May after volunteering for the 2010 Vancouver Olympics. My husband and I renewed our vows on one cruise so after 37 years we just decided to celebrate. I think we will make it another celebration. Meeting you all and our 38th year. Mostly to celebrate with your family. We, (our family) love you, Bobby, Michael, Jamie and your family. I rode the train with you and the boys and President Carter in 2002 to Plains. I did not know you then. A few months later I read all about you and The Lady and Sons in SOUTHERN LIVING.
