Grilled Lamb Chops and Peaches With Arugula Mozzarella Salad Recipe by Paula Deen

Ingredients

  • 2 lbs lamb rib chops, (thin)
  • 2 peaches, pitted and sliced into thick wedges
  • 6 cups baby arugula
  • 1/4 red onion, sliced
  • 1 cup mini fresh mozzarella balls
  • 1 drizzle olive oil, to taste
  • balsamic vinegar, to taste
  • kosher salt, to taste
  • black pepper, to taste

Preparation

Step 1

Season lamb chops and peaches with salt and pepper.

Step 2

Grill lamb 4 minutes on each side (they will be medium rare.) Grill peaches for 4 minutes on each side as well.

Step 3

Add arugula to a large bowl and toss with red onion and mozzarella. Drizzle with olive oil and vinegar, season with salt and pepper, then toss again.

Step 4

Divide the salad between 4 plates and top with lamb and peaches.

Supper was..Supe

Supper was..Super!! I made a Paula Dean Recipe from her new PD Network....Grilled Lamb Chops and Grilled Peaches with Arugula, and Mozzarella Salad...It was worth every penny I spent for those Lamb Chops! My son's first time trying Lamb Chops....My sister raved about it!....I will be making this again and again.....Super simple, and so Delish! Thanks Paula!
