Grilled Corn and Watermelon Salad Recipe by Paula Deen

  • 2 tablespoons vegetable oil
  • 3 ears sweet corn, husks and silks removed
  • 4 cups watermelon, seeded and diced
  • 1/4 cup feta, crumbled
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons mint, finely chopped
  • black pepper, to taste
  • salt, to taste


Step 1

Drizzle corn with oil and season with salt and pepper. Grill, turning on occasion, until slightly charred, about 8 minutes.

Step 2

Remove and cool, then slice the kernels off the cob.

Step 3

In a medium bowl, gently toss all ingredients. Serve immediately or chill.
