Grilled Chicken and Broccoli Salad Recipe by Paula Deen

  • 4 chicken cutlets, pounded thin, about 1/4 inch
  • 2 heads broccoli, cut into bite-sized florets
  • 1/2 cup red onion, chopped
  • 1/2 cup raisins
  • 8 oz sharp cheddar cheese, cut into very small chunks
  • 1 cup mayonnaise
  • 2 tablespoons white wine vinegar
  • 1/4 cup granulated sugar
  • 1 cup cherry tomatoes, halved


Step 1

Preheat grill pan. Season chicken cutlets with salt and pepper and place on grill, cook on each side for 3-4 minutes each.

Step 2

In a small bowl, rehydrate raisins with water or extra white wine vinegar.

Step 3

In a large bowl, toss together the broccoli florets, chopped red onion, raisins, cheddar cheese and cherry tomatoes.

Step 4

In another small bowl, whisk together: mayonnaise, white wine vinegar and sugar. Pour over broccoli mixture and toss together. Slice chicken and serve on top of salad.

This is absolute

This is absolutely AMAZING! I did not add the chicken but it was just as good without. My son hates veggies and this is an amazing way to get him to eat them. Thanks Paula!!!!!!

Simple and delic

Simple and delicious! The dressing was super tasty. I used less cheese than it called for, and that was more than enough for my tastes.... But overall yum!
