I think about IT…dream about IT…and when face to face with IT, I just have to have IT….
“IT” is not another man, fast car or my new LV suitcase… “IT” is Paula’s Key Lime Pie served at Uncle Bubba’s Oyster House. Tart and sweet with just the right thickness of graham cracker and almond laced crust. “IT” is what I’m having for dinner tonight.
Bubba’s Key Lime Pie
Ingredients:
Crust:
5 tablespoons butter, melted
1 1/2 cups graham cracker crumbs
1/2 cup almonds, slivered
Filling:
2 egg yolks
2 teaspoon grated lime zest
1/2 cup Key lime juice
1 14-ounce can sweetened condensed milk
Sweetened whipped cream:
1 cup heavy cream
1/4 cup sugar
Directions:
Preheat the oven to 350 degrees.
For the crust, combine ingredients and pat down into a 9-inch pie pan. Bake for 5-10 minutes. In a medium bowl, beat 2 eggs yolks. Add condensed milk, key lime juice and zest. Blend together. Pour filling in crust and bake for 15 minutes. Refrigerate pie overnight before serving to let set.
To make sweetened whipped cream, slowly add sugar to heavy cream while beating, taking speed up as the mixture thickens.

I'm a diabetic, and I would love to see Paula do recipes for sugar free dishes . Being from the south also, all the hand me down recipes that I have, require tons of sugar. The recipes also have the foods that turn in to sugar when you eat them. Nothing beats Southern Cooking . I understand that they have tons of sites you can go to for diabetics, but not for southern recipes. Thanks for you time..
