Chocolate Spice Cupcakes For Two

By Stefani Pollack

While these chocolate spice cupcakes for two take only five minutes of prep time and “bake” in the microwave for just ninety seconds, there is nothing simple about their taste.  Brown sugar, ginger, nutmeg, cinnamon, and allspice bring the best part of the classic spice cake to a cupcake that will thrill chocolate lovers. Serve warm with a dollop of whipped cream and festive sprinkles.

Be sure to microwave the cupcakes in silicone cupcake liners – paper liners won’t hold their shape and foil liners are not microwave safe.

Chocolate Spice Cupcakes For Two
Yield: 2 cupcakes

2 tablespoons all-purpose flour
2 tablespoons brown sugar
4 ½ teaspoons unsweetened cocoa powder
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground ginger
4 ½ teaspoons milk
1 ½ tablespoons unsalted butter, melted
½ egg, lightly whipped (approximately 2 tablespoons whipped egg)
Prepared Whipped Cream

Whisk flour, brown sugar, cocoa powder, cinnamon, nutmeg, allspice, and ginger in a small bowl.

Mix in milk, butter, and egg.
Divide evenly between two silicone cupcake liners.

Microwave on medium for one minute.

Microwave again on medium for thirty seconds.  If the cupcakes do not bounce back when lightly touched, repeat this step.

Top with whipped cream and sprinkles.
Serve warm.

The recipe sounds good only, none of your recipes make notation of adjustments for high altitude. I live in the mountains and live at 10,000 altitude. Mary Ann

Hi Paula, massive fan here! I know it sounds ridiculous, but I don't have a microwave!? Can I just pop these babies in the oven? They sound delish! If so, which temp and for how long? x

I watch your show daily. You have inspired me to write a book of cakes. It is now published and may be seen as an ebook on Trafford Publishing, Amazon and Barnes&Nobles;. Thank you so much for the inspiration. WE both have acquired type two diabetes. Not an easy thing to deal with.

Lorien - I found them at Michael's, but I'm not sure if they still have them after Valentine's day. You can buy them online here: Anon - Don't worry. There isn't a typo. The egg does the leavening in this recipe.

I LOVE your recipes and have most of your books. Today, Saturday, 2-12-11, I saw a recipe for Chocolate/Coffee Cupcakes. I'd love to make them for my grandchildren as the last one is going off to college after this year and this is the end of line that has been so much fun. Love You, Claire
