Bobby’s Lighter Pumpkin Crunch

Bobby’s Lighter Pumpkin Crunch

Ingredients:
1 (15-ounce) can pumpkin puree (not pumpkin pie mix)
1 (12-ounce) can fat-free evaporated milk
3/4 cup sugar
1 teaspoon ground cinnamon
2 eggs whites
1 large egg
1 (16-ounce) package sugar-free yellow cake mix
1/2 cup chopped pecans
4 tablespoons cold butter, cut into small pieces

Directions:

Preheat the oven to 350°F. Spray a 9 x 13-inch baking dish with nonstick spray.

Whisk the pumpkin puree, evaporated milk, sugar, and cinnamon in a large bowl until well mixed. Add the egg whites and egg, whisking until well blended.

Scrape the batter into the baking dish. Sprinkle the cake mix evenly over the batter to cover completely. Scatter the nuts and butter pieces over top.

Bake, uncovered, until a toothpick inserted in the center comes out with a few moist crumbs attached, 45 – 50 minutes. Cool on a wire rack.

TEST KITCHEN TIP:

Even though Aunt Trina serves her pumpkin crunch with cream cheese frosting, our lighter version is so good we didn’t miss it. If you want to indulge, serve with a small scoop of sugar-free butter pecan ice cream or a little reduced-fat non-dairy whipped topping sprinkled with a little cinnamon.

I make something similar called pumpkin pie cake. I leave out the nuts because of people I know who has nut allergies. I may test out this recipe just to see if it tastes similar to my recipe. I use fat free evaporated milk as well. I love pumpkin desserts and it's nice to see Paula's recipes lightened up for those of us who cook and eat healthy. I made this for my turn at dinner night. This is our 5th or 6th year of getting together once a week and let me tell you we have repeated many recipes. My group LOVED this desert and asked me to make it again very soon. I guess it doesn't matter if it's light if you end up eating half the pan right? smile Thank you for this lighter recipe. I made this recipe for the holidays. I couldn't find sugar-free cake mix so used regular yellow cake mix. The box was 18.25 oz and the recipe said 16 oz. so I threw away some of the cake mix. I had the same experience as a few others who said there was cake mix floating on top and didn't dissolve into the liquid. I wasn't sure if I made it right but I tried a piece after it cooled and it did taste good. Thank you Bobby for giving us lighter recipes.

I tried this recipe yesterday and wasn't sure if I made it correctly. I also had powdery cake mix on top afterwards. I have a question about the cake mix. I couldn't find a sugar-free yellow cake mix so used a regular box but the oz were 18.25 and the recipe calls for 16oz. Therefore, I threw away about 2 oz. I probably won't make it again and will make the original recipe which is easier to follow. It does taste good but I'm concerned about eating it when it looks like the cake mix isn't cooked enough.

I tried this for Christmas Day and it was wonderful. My only suggestion would be to use 1/2 or 3/4 of the dry cake batter, once it was finished there was a lot of crumbly cake batter. But over all it was fantastic and the whole pan was gone...I will make this again!

I made this lighter pumpkin crunch recipe and it just didn't turn out. The cake mix sat on top and was powdery...I have re=checked the recipe 3 times and checked the cans etc to make sure I had the correct ingredients and I did...have you had other people who had trouble with this? Was I supposed to add cake batter and not the dry powdered product? Thanks.

Like Deborah Taylor, I also love my Paula Deen red porcelain pot set! The sizes are perfect for my husband and me. However, I need to purchase another 2-qt pot w/lid so that I can cook two veggies at the same time or larger amounts when having guests. The Paula Deen Store and Paula Deen Enterprises have told me the 2-qt. pots are not sold as open stock. Paula is missing a potential market share, and I am missing another 2-qt. pot! Paula, I love the red color you have used in your pots & pan collection. However, one thing I would like to suggest. Make the pots bigger. We have a large family and we would need double the size and more. The ones you have are very attractive and a good weight. Just please make them bigger! Large families are not a thing of the past.

We found out that my Goddaughter is diabetic. Thanks to your son Bobby I have been able to make foods that she can eat. At that my mom doesn't like a lot of sugar in anything she eats. The recipe we made was sweet potatoes and everyone came back for more. We even shared with people at the VFW and they kept asking if we would make more. Thank you Paula for having a son like Bobby!!!
