Bobby’s Lighter French Coconut Pie

Ingredients:
1/2 cup sugar
2 large eggs
2 tablespoons butter, melted  
1 tablespoon all-purpose flour
1 cup low-fat (1%) milk
3/4 cup unsweetened shredded coconut
1 teaspoon vanilla extract
1 teaspoon coconut extract
1 (9-inch) unbaked pie shell

Directions
Preheat oven to 350 degrees F.

Beat the sugar and eggs in a large bowl until pale yellow. Whisk in the butter and flour until blended. Add the milk, coconut, and both extracts. Pour into the prepared pie shell, transfer to a baking sheet, and bake until set, about 40 minutes. Chill pie for 2 hours before serving.

Cook Time: 40 minutes

Yield: 8 servings

I just adore watching your mom’s show and would love more than anything to actually meet ya’ll. My mom is a true southern cook too and it is such a delight to make some of the recipes that ya’ll make.  Thanks for the lighter recipes too I have to watch what we eat for healthy reasons, but love the shows!!  God bless and keep on cooking!!

hey bobby i love watching your mom and you in the kitchen everyone that knows me calls me butter oueen #2lol im like your mom i love my butter lolbut unfortally ive had too cut back on it a little im now cooking two diabetics my boyfriend and his mom they both are watching what they eat i know thats hard they both love good old southern cooking and ilove cooking and eatin i love coconut pie so this one is great they can have a slice and ican have two with whipping cream lol and of couarse my greens would like to get morelighter recipes keepup the good work yall avery big fan grace russell okc.,ok.
