Bake Sale: Chocolate Gingerbread Cupcakes

Gingerbread is traditionally dark, dense, and heavily spiced.  These cupcakes take the holiday classic to a whole new level by adding chocolate, a splash of coffee, and a bold, ginger orange glaze.  Decorate the cupcakes with paper gingerbread men toppers (shown in the photo) or bake up some gingerbread men cookies and place them on top for double the gingerbread fun!

Chocolate Gingerbread Cupcakes
Yield: 10 cupcakes

Cupcake Ingredients
¾ cup unsalted butter, room temperature
½ cup sugar
1 large egg
½ cup molasses
1 cup all-purpose flour
½ cup cocoa powder
½ teaspoon salt
¾ teaspoon baking soda
1 teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon ground clove
¾ cup brewed or instant coffee, near boiling

Cupcake Directions
Preheat oven to 350 F.
In a medium-sized mixing bowl or bowl of a stand mixer, mix butter and sugar until light and fluffy (about 3 minutes).
Mix in the egg and molasses until fully combined.
In a small mixing bowl, whisk together the flour, cocoa powder, salt, baking soda, ginger, cinnamon, and clove.
Alternately add the dry ingredients and the coffee to the wet ingredients.  Mix well after each addition.
Bake for 20 minutes or until cupcakes bounce back when lightly touched.

Glaze Ingredients
¾ cup powdered sugar, sifted
¼ teaspoon orange extract
½ teaspoon ground ginger
¼ teaspoon ground cinnamon
1 tablespoon + 1 teaspoon whole milk

Glaze Directions
Mix all ingredients in a small bowl.  The glaze should be thick, but easily spreadable. 
Spread onto cooled cupcakes.

Although I love Paula and most of her recipes, these cupcakes were awful! It hurts my heart to say such things. Paula Deen is an amazing cook, and I can only count on one hand how many recipies I've tried that I don't like. These cakes were tough and the molasses was overwhelming. Sorry Paula, not one of your better ideas!

hope to hear you are having much success with your smoking habit - everyone is behind you on this one saw you on dr. oz. hope you and yours had a wonderful holiday season. many thanks for sharing your successes in the kitchen with us. planning on a trip to ga this year will definitely stop by and eat at restaurant and hope to see ya too. plan to buy some stuff while im there. i made the fruitcake cookies this year as gifts to fruitcake lovers and these were a big hit. everyone said they loved them and never heard of fruitcake cookies before. so i thank you for a yummy recipe. going to try the gingerbread cupcakes with cream cheese frosting soon. we did make a gingerbread house this year, it was delicious and we added cream cheese frosting on it set it off wonderful. tip dont have cream of tartar use marshmallow cream to hold it together it works. many thanks

BEST CUPCAKES EVERRR!! I am a senior in high school and love baking. I am so happy i found this recipe early in my life so when i grow old and have kids or whatnot i will be making these cupcakes weekly(not likely, but hopefully)!! These cupcakes i want to share with the world. Thank you so much for the recipe:)) P.S. I changed the extract to strawberry instead of orange for the glaze, and it was DELICIOUS!

Hello Paula. I love your shows and website so much. I feel like you and I have some sort of connection. Why, well you see I am a single mom of two beautiful girls and I am trying to keep my house at the moment. It's hard because a year ago tomorrow I had back surgery and I am not unemployeed. My dad owns a produce stand here in Concord and I asked him if it was possible if I could open up a bakery. So I have been open now for a little over a month. I was so inspired with how you made it so I just had to give it a try. I also am a Partylite Consultant and trying to get that going as well. So far with the bakery, I can not make the pies and cakes quick enough. They are selling as fast as I can make them. I have an order due to go out Wednesday Dec 15 of 20 pies (10 apple and 10 pecan) and 20 loaves of bread (10 banana nut and 5 zuchini and 5 pumpkin) and she also wants 40 tins of party mix also. I pray I can get it all done for her. One lady has ordered all that plus she wants 40 jars of jelly and preserves which dad already carries. The place I have the bakery is called Mayberry's Produce which is my dads last name and he actually pays me to work the bakery, $10 an hour. It's not much but atleast its a job. I love what I do I just wished I could like open my own up some where and make it big. I love to cook, guess I get that from my Nannie. Wished she was still here to see it. I had a lady last night on Facebook tell everyone that my Apple Dapple Cake was the best she has ever in her life had. I thought that was alittle over the top since that was the first one I had ever made. She has ordered another one for tomorrow. And from her saying what she said on Facebook, I received two more orders for cakes to be picked up on the 23rd. My pecan pies go as fast as I can make them. In two days I have made 7 and we are completely out now. Was having a problem with meringue but had an order for a chocolate meringue today and it turned out perfect. I'm just glad it is going good, I just hope I can keep up with what everyone wants so it doesnt fall apart. I had a man tell my mom today that I needed to start cooking some country food in my kitchen as well like cornbread and beans smile I really am glad there are women out here like yourself that people like me (no bodies) can be inspired and look up to.....Thank you for that.
