A Tomato Dinner with Paula

By Libbie Summers, Senior Food Editor

We’re seeing red on our website this week! A certain shade of tomato red to be exact. It’s tomato harvesting time and they are coming in by the truck loads. On the road to Paula’s home this morning, I passed 4 truck farmers selling just picked Better Boy tomatoes and some of the biggest watermelon I have ever seen. Tomatoes are so abundant, in fact, that we are running a wonderful Home Canning 101 article so you can put some up for a little taste of summer, come winter.

Paula has been wanting to share her love of canning with her readers for a while now and she is over the sun AND moon that you now have all the information to put up some of your favorite summer fruits and vegetables while they are at their freshest, abundant and most affordable.

Because we don’t like anything to go to waste, I want you to know that Paula was ACTUALLY canning tomatoes during the photo shoot for this week’s home page feature article. We had tomatoes all over the place and everyone on the crew went home with a bag full. Brandon (Paula’s Design Director) said he made a big Georgia Cracker Salad for his dinner party that night. Michelle White (Paula’s Brand Manager) said she made some deliciously beautiful salsa. The photographer, Chia Chong said she roasted hers for an earthy soup. For me…I sliced a plate full….hit them with a little sea salt…handed an extra fork to Paula and she and I sat down to dinner.

Eat something homegrown and hand an extra fork to your boss,
Libbie

You just can’t beet a good tomato any time. Paula looks so pretty in her kitchen with all those jars of tomatoes.
