5 Fantastic Potato Salad Recipes

A potato is the blank canvas of the kitchen; be it cheesy, creamy, scalloped, or fried- potatoes can take any meal from dud to spud-tastic in a flash!

The easiest, and most convenient ways to use a leftover potato is in a salad. Have roasted potatoes from the night before? Throw ‘em in a bowl with a binder, like Paula’s favorite creamy mayonnaise and spicy Dijon mustard, and combine with just about any other ingredient in your kitchen – with the exception of your kitchen sink, of course.

Onions, celery, boiled eggs, bacon, pepper and fresh from the garden herbs all make great additives for potato salad. Because they’re so simple to make, and easy to transport, potato salads make for the perfect picnic, family reunion, or even a cost-effective side dish to your office lunch.

The next time you find yourself with a pile of potatoes and no inspiration, why not try your hand at one of these time saving, flavor-packed salads!

Here is my favorite recipe, and it probably is similar to yours as you are a Southern lady like myself: 4-6 large boiled potatoes, diced 1 or 2 boiled eggs 1/2 chopped onion (less according to taste) 1/4 c chopped celery salt and pepper to taste 1 t mustard (spicy is good as well) 2 T or so of Kraft Mayo - I like to use 'just enough' to make it moist Dill pickles, diced or now they have the relish...saves time! Mix all together and chow down! I usually can't wait to get it ready, so I 'taste test' along the way to make sure there is enough salt and pepper. If you're feeling 'sassy' you could add a tad bit of jalapeno, but just enough to give it a 'bite'. I don't like things that 'bite back' too hard! hahahaha!! It used to be that I could not keep enough of this at holiday meals, nor deviled eggs! I always had to make more! Oh and on the salt, with the mustard and dill pickles, you need to give it the old taste test or it will be too much. I am a diabetic also, and need to watch my intake. It has been doubly hard for me to lose weight b/c I have a thyroid problem as well. Good luck! You are looking great girlfriend!! Pat Carleson

My mom and grandma made such wonderful potato salad. There was nothing sour in it, like vinegar, mustard or pickles...just potatoes, celery, radishes, scallions and mayo. Sometimes we add dill weed. There's just something about the simple taste of the potatoes and mayo. Add the crunch, and you've got a great salad!

MY FAVORITE POTATO SALAD IS "MASHED POTATO SALAD" EVERYTHING, AS YOU LIKE IT GOES IN THE MASHED POTATO'S MIX WELL AND CHILL. SOOOO GOOD. MY GRANNY ALWAYS MADE IT LIKE THIS WITH LOTS OF FRESH MAYONAISE-A LITTLE MUSTARD- AND A LITTLE SUGAR. PLENTY OF EGGS-ONION-CELERY AND GREEN PEPPER.

My wife and I always loved watching your show on Food Network. You are so bubbly and friendly, and you remind me of my dear Mother gone but never,ever, forgotten. She was a wonderful cook also. Thanks for brightening up our lives as I know you do many others. BTW- your better butter burgers rock my whole family has them when dad pulls out the grill I addede onions to the burgers. My favorite potato salad is 1 lb red pot skin on 1pint sour cream 2 C mayo 1 C chopped green onion 1 C shredded cheddar cheese 1/2 C crisp cooked bacon 1 tsp black pepper 1/2 tsp paprika 1 tsp onion powder Mix all together salt to taste This my loaded potato salad
