Ingredients

  • 1 cup self-rising cornmeal
  • 1/2 cup self-rising flour
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons vegetable oil

Preparation

Step 1

Preheat oven to 350°.

Step 2

Combine wet ingredients and dry ingredients in separate bowls. Add the dry to the wet ingredients and mix until just combined. (It's OK to leave a few lumps. Do not overmix!)

Step 3

Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.
