Ingredients

  • 1 cup mayonnaise
  • 1 stalk celery, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 1/2 lemon, juiced
  • 2 teaspoons curry powder
  • 1 (3 lb) roasted chicken, skin removed, meat picked
  • 2 cups seedless red grapes, halved
  • 1/2 cup roasted and salted almonds, chopped
  • kosher salt, to taste
  • black pepper, to taste
  • whole wheat bread, for sandwiches, optional
  • lettuce, for sandwiches, optional
  • tomato, sliced, for sandwiches, optional

Preparation

Step 1

In a large bowl, combine the mayonnaise, lemon juice, curry powder, salt and pepper. Gently fold in the chicken, grapes, celery, onion and almonds.

Step 2

Taste for seasoning and adjust accordingly. Serve on whole wheat bread with lettuce and tomato.
