I love alot of your recipes and watch you all the time. I wish the very best for you. My dad also is a diabetic. It's hard when your whole life you ate a certain way, then all of a sudden it catches up with you. It's hard to give up all those good things we used to eat. The lemon version of ooey gooey butter cake is my and my family's favorite. My son-in-law always requests this cake when we all get together to eat. Don't know how I ever made a meal til I started watching Paula & using her cookbooks. The corn casserole is one of my very favorite dishes & the banana bread is the best recipe I've tried. Thank you, from one southern gal to another!

Your lemon recipes sound just so fresh - here is a really easy one that I am sure you will love Peel and dice 3 tomatoes, and 2 cucumbers very small add juice of two lemons and let sit over night that is it - refreshing eat any time salad - that goes great with fish or chicken!
