Butterscotch Slice Cookies

Butterscotch Slice Cookies
Yield 8 dozen cookies

Ingredients:
1 cup butter, room temperature
2 eggs
2 cups brown sugar
1 teaspoon vanilla
1 cup chopped nuts
3 cups sifted flour
1 teaspoon baking soda
¼ teaspoon salt


Directions:

In a medium mixing bowl, sift together flour, baking soda and salt.  Set aside.

In a large mixing bowl using a hand mixer, cream together butter, brown sugar and vanilla. Add eggs one at a time.  Add flour mixture one cup at a time and mix well.  Stir in chopped nuts. 

Place dough on wax paper and form into 2-inch rolls.  Refrigerate overnight.

Preheat oven to 375º F. Slice into 1/8 inch slices and bake on an ungreased baking sheet for 5 to 6 minutes.

Allow to cool slightly before removing from baking sheet.

Notes from the Paula Deen Test Kitchen: Makes a great cookie to be served with tea or coffee.  Dough freezes well.  Dough is easier to cut when frozen.  If using this method, allow cookies to sit 3-4 minutes on a cool baking sheet before baking.

Why would you ruin these old fashioned butterscotch cookies with those horrible artificial butterscotch chips? My blessed grandmother made these back in the 1940's and they were my favorite. You have the right idea Paula.....natural is much better!

I love that the butterscotch flavor comes from the butter and brown sugar instead of those disgusting chips so many other recipes use. I wonder what the best nuts would be? I used walnuts because I had several pounds on hand but I think pecans might have been better.

Butterscotch is made of brown sugar and butter, which are the primary ingredients of these cookies. After the ingredients are mixed, the dough tastes just like butterscotch!

I expected them to have butterscotch chips but don't see that in the recipe. Also I have trouble getting sliced cookies to be round instead of oval. I wrap them in a towel to try to keep the round shape. Suggestions?

Always watched the shows when I lived in US and now back in NZ try and get as much merchandise as I can . Just love Paula's enthusiasm and cookin! Would love to get more but your store does not ship internationally so use Amazon a lot. Yummy cookies great with milk as after school treat.

Yummy Yummy Yummy....But what else would you exspect from Paula Dean but Yummy...and I love that when we print the reciepes that we can choose the print size.I love the way Paula and her boys cook together and her and Michael are great on stage , saw her once in Va but didn't get to meet her, but it was great just to see her and watch her cook with Michael. Paula, I am glad to know that I am not the only person who makes Easter Baskets for their adult children and mail them across the United States. My Daughter lives in Long Beach, CA and I not only sent her a basket but her husband and my granddaughter Reese. We also buy special Russel Stover Bunnies for each child too. My husband has the list in his phone... Sara .. Cookies 'n Crème.... Sidney and Stephen.. Peanut Butter Etc. It one of my favorite things to do for my kids.. no matter how old they get. And passing it along to my Grandchildren. It's even more special to me knowing we share a family tradition. Blessings and Happy Easter!!
