Southern Fried Chicken “un-fried”

321mg Less Cholesterol


8 skinless boneless chicken thighs, trimmed of all visible fat (about 1 1/2 pounds)
1/2 teaspoon Paula Deen’s House Seasoning
1/4 cup light mayonnaise
Zest and juice of 1 lemon
1 egg white
1/2 teaspoon hot sauce
1 1/4 cups cornflake crumbs

Preheat the oven to 375 degrees. Spray a large shallow baking pan with nonstick spray.

Sprinkle the chicken with the House Seasoning. In a large bowl, combine the mayonnaise, lemon zest, juice, egg white, and hot sauce. Add the chicken; toss to coat.

Place the cornflake crumbs on a sheet of wax paper. Dip the chicken into the crumbs pressing so the crumbs adhere. Place the chicken in the pan and lightly spray with nonstick spray.

Bake until the chicken is golden brown and cooked through, 40 – 45 minutes. Do not turn.

Cook Time: 45 minutes
Difficulty: Easy
Yield: 8 servings

Bobby and The Test Kitchen Notes:  Although we all enjoyed this much lighter version and we hope you make it again and again, we decided there is something about an old fashioned fried chicken recipe.  You just don’t mess with it…we unanimously decided we would rather just eat fried chicken a little less frequently the way it was meant to be prepared.

Hi everyone. I am 65 recently retired and enjoy doing the cooking now. I do follow your lite meal ideas. I can, and do follow your recipes as best I'm able. I also am board line diabetic, and not quite sure about which recipes are best to use .Can you help me with decisions? I admit that I am a long time viewer of your tv programs, still miss seeing them. I made this with my daughter today and everyone loved it. (House Seasoning is just 1 cup of Salt, 1/4 c of Garlic Powder and 1/4 c of Black pepper) One thing i did different is stick the corn flakes in food processor to make the bits smaller. Next time I will add more hotsauce and just a tad bit less lemon juice to give it a southern kick ; )

My daughter is not a cook, she will try a recipe every now and then, and most of the time it is with help from me, but the other day she used the Crab Cake recipe, but this time she did it her self. Well they were the best crab cake that I and my husban had ever had....even her son who is 10 tried some, and he liked it.....the only thing is we are a big garlic family, so we made a note to add some garlic to it the next time.....

I made Bobby's "Lighter Chicken and Rice Recipe" today. We all loved it! I did change it up a bit - brown rice for the long grain wild rice and left the mushroom out. I will make this again soon. Thanks the the recipe - yum!!

I was excited to try this recipe until I read Bobby and the test kitchen comments. It seems counterproductive to publish this recipe and then basically say the unhealthy version is the only kind worth making. Make up your mind.

I made Bobby's un-fried chicken using chicken tenders. Fabulous! My kids and I loved them! So crispy, crunchy, and flavorful. I added some lemon pepper to mine and hubby's to give it some heat. Will definitely be making again and again. I can't wait to try other spices too. Bobby's mac 'n cheese is next on my list. Thanks Bobby!

I finally had the opportunity to try this recipe last night and loved it! I did have to improvise just a bit, as I didn’t have any Corn Flakes!  So, I substituted “Special K” and it worked out great!  Very tasty dish; we completed the meal with rice and mixed vegetables… yummy!  Another hit from the Deen Family Kitchens!  Thanks!!!

Bobby, I am so proud to find your Lighten It Up site !!  My husband and I are diabetics and are supposed to watch, as you know, carbs and fats. So this is really going to help me. Of course you could substitute breasts. Bobby tries to keep things as affordable as possible.  The thighs were less expensive and juicier. That being said, they are also higher in fat and calories, so a breast is certainly the better choice for that. Good luck and let us know how everything turned out!
