Bobby’s Lighter Chicken Pot Pie

Bobby’s Lighter Chicken Pot Pie

Ingredients:
2 cups cooked cubed chicken
2 cups frozen mixed vegetables
1 cooked cubed all-purpose potato
2 (10 3/4-ounce) cans fat-free cream of mushroom soup
1/2 cup fat-free milk
8 (12 x 17-inch) sheets thawed frozen phyllo dough
Directions:

Preheat the oven to 375°F degrees.

Combine the chicken, mixed vegetables, and potato in a large bowl. Stir in the soup and milk until well blended. Ladle about 1 1/4 cups chicken mixture into each of 4 ovenproof bowls. Place bowls on a jelly-roll pan. 

Stack the phyllo sheets. Roll up, starting at a long side, then cut into 1/2-inch strips. Place the strips in a large bowl tossing to separate the strips. Spray the strips with nonstick spray and arrange over the chicken mixture. Lightly spray the tops with nonstick spray. Bake until the filling is hot and the phyllo is browned, 25 – 30 minutes.

Yield: 4 servings

I like that you show how many calories were cut and how much less cholesterol, but it would be great if your recipes had all the nutrition information for those of us that count weight watcher points. The recipes I have looked at sound really good but that information would be very helpful. Thank you for considering this.

I know this has nothing to do with the recipes but I would love to know how Paula lost her weight. I too have type 2 Diabetes and suffer from arthritis and other heart issues. I try constantly to reduce my intake and cook "smart". Nothing seems to do the trick. Any advice you can give me would be greatly appreciated. I just got out of the hospital from having 2 stents put in 2 veins at my heart and I need to get this weight off.

I love the Chicken Pot Pie with frozen vegetables. I think canned vegetables in this would be too mushy. I ended up using the fresh pie crust in the dairy section. Placed one in the bottom of the dish, the other on on top. Very good and very simple!

I love Paula Deens recipes the meat loaf one is the best being diabetic . I saught recipes that would not brig my cbg levels up and out of this world. wow. my levels never rose and I felt fine after eating . I really dislike frozen vegetables. The texture is really strange and I think they lose a lot of flavor. I think canned are far more flavorful, but it’s not that hard to cut up some fresh vegetables for this and pre-cook them. If you’re going to go to the trouble of making pot pie (instead of getting a store-bought one) take the extra time to make the veggies good.

Susan Lott is a great party planner! She has tons of great ideas that she needs to share with the online world. I have been begging her to start a Facebook page or Etsy account. The graduation gift that she made me was hand drawn with my name and different definitions for each letter. She framed it and I cherish it.....I also would have paid about $50 for it in a store.
