Bake Sale: Cherry Cobbler Cupcakes

Cherry cobbler fans, these are the cupcakes for you!  Often, cherry cupcakes are made with artificial cherry flavoring and red food coloring. These cherry cobbler cupcakes are the real deal!  Each cupcake has two pitted cherries baked right into the buttery and slightly lemony brown sugar cupcake batter. Top these cupcakes with fresh whipped cream and cherries and serve on July 4th or for any summer party.

Cherry Cobbler Cupcakes
Yield: 16 Cupcakes

Cupcake ingredients:
1 cup brown sugar
½ cup unsalted butter, room temperature
1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 large eggs, room temperature
½ teaspoon lemon extract
1 cup milk
32 cherries, pitted and de-stemmed
2 tablespoons corn starch
2 tablespoons sugar
Fresh whipped cream, to taste
16 cherries with stems, for garnish

Cupcake directions:
Preheat oven to 350 F.
In a medium-sized mixing bowl, beat brown sugar and butter until fully combined.
Mix in flour, baking powder, baking soda, and salt.
Mix in eggs one at a time.
Mix in lemon extract and milk.
Fill cupcake liners ¼ full.  Note that this will not use all of the batter.
Bake for 7 minutes.
While the batter is baking, roll the pitted and de-stemmed cherries in a bowl of corn starch and sugar until the cherries are fully coated.
Remove cupcake tin from the oven and place two coated cherries on top of the partially cooked batter in each cupcake liner.
Divide remaining batter evenly among the cupcake liners, covering the cherries.  The batter will come nearly to the top of the cupcake liners.
Bake for 20 minutes or until cupcakes bounce back when lightly touched.
Top each cooled cupcake with fresh whipped cream and a cherry.

Paula I have loved you ever since your first cooking show that I saw you on at the Food Network. I love your laugh, your spunk, your humor, your love, generosity and kindness. I read your Auto-Biogrpahy and thought it was very brave of you to share your life with the world. I one day hope to visit you at your restaurant and give you a big hug! I wish I could do it today because I think you are in need of hugs as of late. LOVED how you were with Matt Lauer... oh how I dislike him!! You are beautiful and wonderful and deeply loved... as you say, who among us has not said or done something in our past that we regret? Paula: I am saddened and shocked at the terrible treatment you have received from all the networks as well as so many of your sponsors. Today in America the Media has become over sensitive to the subject of race. I know you absolutely had no intention of insulting blacks or anyone else of color. I'm in my late 60's and remember the days of segregation and what racism really was a serious problem. I know we still have to realize that racism does exist. I also know, if we are all completely , with ourselves almost every American has at one time or another used the "N" word. While I don't use it myself I know I have said the word in talking about how the older members of my southern family used the word, especially before the 1960's. I think it is a terrible shame the black Americans call themselves the "N" in their everyday conversation with each other. I am praying for you. Keep your chin up and this shall pass. You have more an apologized sincerely and it's a sad day that the press and your the companies that sponsor you have decided to feed you to the lions. I pray this will all clear up for you soon. Paula, I am glad to know that I am not the only person who makes Easter Baskets for their adult children and mail them across the United States. My Daughter lives in Long Beach, CA and I not only sent her a basket but her husband and my granddaughter Reese. We also buy special Russel Stover Bunnies for each child too. My husband has the list in his phone... Sara .. Cookies 'n Crème.... Sidney and Stephen.. Peanut Butter Etc. It one of my favorite things to do for my kids.. no matter how old they get. And passing it along to my Grandchildren. It's even more special to me knowing we share a family tradition. Blessings and Happy Easter!!
