Sandwiches aren’t just for a school lunch.
This time of year our lives tend to get busier with the hustle and bustle of getting kids back to school. We need filling, easy and delicious ideas for dinner. Why not a sandwich? Not just any ordinary sandwich, but a SUPER sandwich. Filled with the yummy goodness of BBQ Meatloaf, Fried Okra or a dozen plus others we have listed below. Paula likes to make her ordinary sandwiches extraordinary by ALWAYS toasting the bread (it may sound simple, but 4 minutes makes all the difference in the world) and adding a little zing in a special spread. When she has leftover Roasted Chicken from Sunday supper, she likes to mix up a sandwich spread of mayo, lime juice, cilantro and a pinch of cumin for lunch the next day.
This time of year, don’t just think about a sandwich for lunch. Make one for dinner and show your family how much love can be found between two slices of bread!

Love the sandwitch ideas but alot of these require refrigeration. My daughter has no way of keeping these cold.

I have a new love in my life…..Bobby’s pimento cheese recipe. I remember trying pimento cheese on celery as and not liking it much because I hated celery. I read the recipe and thought I would give it another try (without the celery) and I must say it is FABULOUS!
Thanks to the Deens!

Is there a way to keep sandwiches from being soggy on one side and “toasted” on the other when packing lunches to take to the fields? We are farmers and I have been trying for 33 years unsuccessfully to accomplish this feat!
Thanks

To Ronald Bryant: Try Paula's apple cake recipe "Grandgirl's Fresh Apple Cake From Georgia." It is sooooo good. I think you'll like it!
