Ingredients

  • 3/4 cup oil
  • 1/4 cup sugar
  • 1/4 cup balsamic vinegar
  • 1 15 oz) can black-eyed peas, drained and rinsed
  • 1 bell pepper, diced
  • 1/2 cup diced green onions
  • 1 large tomato, diced
  • 1 red bell pepper, diced
  • 1/4 cup parsely, freashly chopped
  • 3 tablespoons freshly chopped thyme and oregano leaves mixed

Preparation

In a small bowl, whisk together the oil, sugar and vinegar.

In a large bowl mix together the remaining ingredients. Pour dressing on top of salad and mix well.
