Ingredients

  • 2 (15 oz) cans black beans, rinsed and drained
  • 2 ears of fresh corn, (about 2 cups of kernels)
  • 2 large tomatoes, seeded and chopped
  • 1 large avocado, peeled and chopped
  • 1 small onion, chopped
  • 3 tablespoons lime juice, (up to 4 tablespoons)
  • 1 tablespoon red wine vinegar
  • salt, to taste
  • pepper, to taste

Preparation

Step 1

Mix all ingredients thoroughly in a large bowl. Taste. Add salt, pepper or lime juice as necessary.

Step 2

Serve with tortilla chips as an appetizer or with grilled chicken breast as a meal.

I doubled the re

I doubled the recipe and took this to a potluck dinner at my daughter's college. It was delicious, and several people commented about how much they liked it.
