Bean Salad

Ingredients

  • 1 cup chopped onion
  • 1 chopped bell pepper
  • 1 can diced pimento
  • 1 cup chopped celery
  • 1 (15 oz) can small english peas
  • 1 (15 oz) can french cut green beans
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3/4 cup vinegar
  • 1/2 cup oil

Directions

Drain the two cans of green beans and peas, and combine with onions, pepper, pimento and celery in small pot. Bring to a boil and set aside to cool.

Dressing:

Mix sugar, salt, pepper, vinegar and oil and add to liquid. Let set in the refrigerator overnight. Can be kept up to 2 weeks.
