Here’s the truth about casseroles: everyone loves them.

And during the cool fall, and even colder winter months there’s absolutely nothing better than sitting down to a piping hot, ooey, gooey, helping of a cheesy, creamy casserole. They’re great time and money-savers too, as you can save large portions for later, and simply reheat them.

We love casseroles because they’re the ultimate comfort food! They’re easy to make, because they’re slow-baked, so it’s hard to mess them up, which is always nice.

Our test kitchen knows that you love casseroles too; so, we’ve collected Paula’s favorite and time-tested casserole recipes to come to your rescue. Go ahead, pop one of these recipes in the oven for dinner tonight!

Hello Ms. Dean! I am writing to tell you that my daughter and I are such big fans of you. Your kindness, humor and grace are inspirational. I am blessed with three daughters. My youngest, Cate, who is four years old adores you. She had been watching your show on Food Network all of her four years. She was having trouble falling asleep at bedtime. We are Catholic, so she asked for her medals of Mary to be put by her bedside. She thought this would keep her safe. The next morning, she explained that although she liked her medal of Mary, she thought a medal with Paula Dean on it would be even better! I have to admit that I giggled. You are on a saintly level in our home, and of course Ms. Dean we all know when sainted, you will be the saint of BUTTER! Thanks for allowing us to get to know you and to enjoy your recipes. I have tried quite a few of your recipes, and they have all been superior. Two years ago at Thanksgiving, I made a gingerbread-pumpkin truffle, and I thought it was your recipe, but I can not find it for the life of me. I had a little taste and it was very good, but that was it and it stayed at my son's house, which they liked it also. The truth is, I would have liked to get a bigger taste. Does anyone happen to remember this particular recipe? Would appreciate any help. I have looked in all of your cookbooks that I have and could not find it. Now I am going to go through all my magazines, and see what I come up with. Thank you for any help and God Bless & have a wonderful Thanksgiving.

To give your broccoli casseroles a little "kick" of flavor, add a little horseradish. Gives it an amazing flavor.

My favorite casserole is Kielbasa & Potato Directions: 1. Spray a large casserole dish to prevent sticking. 2. Peel about 8 potatoes and slice thinly. Let sit in water until ready to use. 3. Slice one stick of Kielbasa and one onion. Separate onions into rings. 4. Cover the bottom of the dish with one layer of kielbasa, then potatoes, then onion rings. Cover with cream of mushroom soup mixed with one can of milk. Just enough to cover in a thin layer. 5. Place a layer of cheese, (Cooper Sharp is excellent) but any kind will do. 6. Start over and continue until all the ingredients are used. 7. Bake at 350 degrees until potatoes are soft and cheese on top is lightly browned. Serve fresh from the oven.

I made your olive-oil and mustard based potato salad. WOW! It was a huge hit at a family potluck and heart-healthy and so flavorful. I wish you'd show the episode where you make it again. Even at this time of year, it's a WINNER. I love how often you have family on your show. It's genuine and that is nice to see... all that love!
