At last my love has finely come along! This soup makes us want to slap our Mama and ourselves! It is definitely the sho-nuff comfort food! If we were rating this soup we would have to say this would be the Cadillac of soups. Before you flop your lip over this goodness you might want to go on and jammy down, (put your PJ’s on) lay up on your sofa and get ready for a long winter’s nap. We truly hope you get as much pleasure from this as we do.
Marvelous Mac ‘n Cheese Soup
2 cups dry elbow macaroni
½ cup onions, diced
2 tablespoons unsalted butter
1/3 cup all purpose flour
½ cup dry white wine
2 cups chicken broth
2 chicken bouillons
1 tablespoon, course ground mustard
2 dashes Hot Sauce
1 tablespoon Cajun Seasoning
2 cups whipping cream
2 cups shredded sharp cheddar cheese
2 cups shredded Gouda cheese
1 tablespoon fresh lemon juice
Salt and pepper to taste
¼ cup crumbled blue cheese
2 tablespoons fresh chives, minced
Look on the back of the macaroni box and follow the directions; drain and set it to the side.
Get your large saucepan out. Add your butter and sauté the onions over medium heat until soft. This should take you about 5 minutes.
Next we are going to make a white sauce; this is easy so don’t panic. Stir in the flour and cook for a minute or two. Deglaze your pan with the wine and simmer until most of the wine has evaporated. Don’t be drinking the wine just add it to the pot! Slowly add your broth, bouillon, mustard, hot sauce and Cajun seasoning and give it a good stir. Let it simmer until the sauce thickens up. This should take about 5 minutes.
This recipe is so fattening but it will be so darn savory! Go on and whisk in the whipping cream and let it warm through. Don’t be boiling it, just let it simmer.
Let’s finish this soup up so you can make your family so happy. Add the cheese 1 cup at a time. After each cup you need to stir and let the cheese melt completely before adding the next cup. Oh my, this is going to be some fine eating right here!
Finally, stir in cooked macaroni, lemon juice, salt and pepper. Remove from the heat and get you a spoon and taste. Easy now it’s real hot. Add more seasoning if you think it needs it. Combine blue cheese and chives in a small bowl. Dress up each bowl of soup with the blue cheese mixture.
