The Sweet and Savory Sisters’ Easy Crawfish Spread

If you are feeling froggy you might want to jump on this dip! We make this spread for a lot of our caterings and it is always a huge hit and makes for a wonderful presentation.

Easy Crawfish Spread

Get It-
1 8 ounce package cream cheese, room temperature
½ cup sour cream
½ cup mayonnaise
½ cup celery, minced fine
½ cup green onion, sliced with tops
Cajun seasoning, to taste
½ tablespoon horseradish
½ pound crawfish, cleaned, chopped and divided
½-3/4 cup the sister’s remoulade or cocktail sauce
Lemon slices and parsley for garnish

Do it-
Count the first 7 ingredients and put them in a medium sized bowl. Combine using your hand-dandy hand-mixer. Next, fold in half of the crawfish meat; repeat only half. We will share a little insider tip with you: Spray your hands with cooking spray before forming the cheese mixture into a ball.  This helps keep the cheese from sticking to you like glue. Take both your hands and make believe you are a child again, playing with play dough and shape the mixture into a ball. Wrap the ball in saran wrap and pop in the fridge and let it chill for about 30 minutes or so. Place your cheese ball on a garnished tray.  We use Swiss chard leaves, salad greens or kale for garnishing. Remember, it’s all about the presentation. Then, pour the remoulade sauce or cocktail sauce all over the cheese ball. We highly recommend that you make the Sisters’ remoulade sauce; it is the sho-nuff.  Sprinkle the remaining crawfish on top of the cheese ball. Now, take those lemons and parsley and make it all pretty. Stick a serving tool in it and call it done! Serve with crackers or scoops.

*Watching your girlish figure and need to cut back on the fat and calories?  Use low-fat cream cheese, mayo and sour cream.  When making the remoulade sauce, use a low fat mayo.  Use celery sticks for all your dipping pleasures. 

What is a remoulade sauce? It is kind of like tartar sauce but has way more flavor. It is usually made with mayonnaise or an aioli base. This yummy sauce works great on cream cheese, sandwiches, Po’ Boys and fried seafood.

The Sisters’ Remoulade Sauce

What’s in it-
3/4 cup mayonnaise
½ tablespoon extra virgin olive oil
1 tablespoon horseradish sauce
2 tablespoons Creole whole-grain mustard
1½ tablespoons ketchup
½ teaspoon hot sauce
¼ cup celery, chopped
1 teaspoon capers
2 tablespoons green onions, tops included
1 tablespoon garlic, minced
1 ½ tablespoons chopped parsley leaves
1 teaspoon Cajun seasoning

Make it-
Mix all the ingredients together and stick it in the fridge until you are ready to use.

I am so glad the judge through out the lawsuit. I am such a fan of you and your sons. I love all of your shows, Jamie's, and of course, Bobby's shows. You all have great hearts. You all love people. Your love for food has been crafted so well. I have bought a few things from your store. S&P holder and green skillets. Great things to have in my kitchen. I would come back and sue the person that sued you. At least for damages. She ruined your business and what you have worked for all your life. But the thing that gets my gote--all the people you have helped to have their own shows on the Food Network all of your guests (Bobby Flay, Guiada, Ree Drummond, Trisha, and The Neely's) not one of them stood up for you, when they were supposed to be your friends. They have you to thank for their shows. I would do like Oprah and Martha Stewart - get your own network. That way you can do whatever you want with it. Paula Deen Network - that has a great sound to it, right? Thank you for all you have done to help others who were unfortunate. With all the donations of hams. That is a real help.

Paula: Hold your head up high. You are still precious in the eyes that matter. Let no man judge another unless he is without sin. You have not done any more than anyone else. You just admitted it is the only difference. You go girl and be who you are. Some people just like to step on the toes of those who work hard to get it. But to wait 20 years to do it, come on people get real. They should all be ashamed of their self. They also will have to meet their maker. I saw a sign this week it said its not what we finish but what we start in the eyes of the beholder. So you people who are starting this stuff go for it. You will get yours one day. Paula, Didn't know where to post this but I just wanted you to know that it is terrible how people have responded to your honesty. I grew up with the "N" word. We thought nothing of it. In fact it was a joke and black people used it too. So your admission makes complete sense given the time when we were born. Now, it is improper and I respect their wishes. But I admit that it was common to us all when I was raised, I feel for you. The people that judged you are the biggest Hippocrates that lived.
